Caviar is basically unfertilized eggs derived from female species of Sturgeon like Beluga, Ossetra and Sterlet.

          Sturgeon's gender can be identified only after 5 years of raising, hence both male and female Sturgeons are raised , though male sturgeons don't produce Caviar. Sturgeons also don't produce eggs annually. 

Storage and Handling 

          Proper Storage and handling are crucial aspects of Caviar production contributing to cost of the exquisite delicacy. 

          As Sturgeon Caviar is highly perishable specialised facilities are needed to sustain the freshness of caviar by preseving at right temperature and humidity.
